Application: Bakery

  1. Cut chunks of butter into the flour until it resembles small, mealy-like pieces.
  2. Add the remaining ingredients and mix until a dough forms.
  3. Put the dough in a sheet pan with a 1-inch height thickness.
  4. Let the dough rest in the freezer for at least 1 hour.
  5. Cut the dough into 5-inch long strips.
  6. Cut the individual strips into 1/12 inch thick slices.
  7. Put the slices on a sheet pan with parchment paper and use an egg wash on the top.
  8. Bake at 400°F in a convection oven until the edges are golden brown.
  9. Retail product can be packaged as a raw and frozen item that the consumer can cut and bake from home.
