This tart marinade is perfect for chicken or steak. If you like things a little sweeter, its okay to add one tablespoon of light-colored honey.

Ingredients

  • 3 tablespoons lime juice, fresh
  • 1 teaspoon cumin seeds, whole
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • 2 tablespoons cilantro, minced

Preparation

  1. Whisk all the ingredients together in a wide, shallow bowl or a pie pan. Add 3/4 pound lean steak or boneless chicken breasts. Marinate for a minimum of 20 minutes before grilling.
  2. If you are cooking this on the stovetop, rather than on a grill, you can cut the meat into thin strips before marinating. This will maximize the tart flavor and make for very quick cooking time (only about 4 minutes in a hot pan over medium-high heat!)
  3. Prior to service, toast walnuts in the oven for 8 to 10 minutes at 350°F. Sprinkle the toasted walnuts on top of the marinated chicken or steak.
