Mango Tango
This salad has everything in it. Leave out the chicken for anyone that does not eat meat. This is a great salad. It has fruit, grains, beans, and of course English Walnuts.

Ingredients
1 fresh mango, peeled and diced
1 19 oz can black beans, rinsed and drained
2 cups leftover cooked brown rice, cold
2 cups leftover cooked chicken, diced
1/2 cup red pepper, diced
1/2 cup red onion, diced
1/2 cup coarsely chopped California English Walnuts
2 tablespoons less sodium soy sauce
1/4 cup rice wine vinegar
1 teaspoon honey
1/2 teaspoon fresh black pepper
Directions
Place all ingredients in a medium bowl. Toss well. Place equal amounts onto 4 plates. Enjoy.

summer salad. I was looking for something to fill me up and help me loose weight. I left the oil out of the dressing to lighten it up.

very good salad. I do not like black beans but that was OK i just left them out and it was still really good. nice job.
