Sweet Savannah Shrimp & Spinach Salad with Walnuts and Barley
This sweet and spicy shrimp spinach salad makes a satisfying summer lunch or dinner with the combined nutty goodness of the toasted walnuts and the barley. Who said eating healthy couldn't be fun?

Ingredients
Dressing:
1/4 cup olive oil
1/4 cup honey
2 tsp minced bottled garlic
3 tablespoons red wine vinegar
1/4 cup fresh lemon juice
1/4 tsp salt
1/2 tsp paprika
1/4 tsp cayenne pepper
1/8 tsp ground black pepper
Other ingredients:
2 cups canned vegetable broth
1 cup quick cooking barley
1 tsp cumin
1/2 tsp garlic salt
1/2 lb. cooked medium shrimp
1/4 cup very thinly sliced red onion
1/2 cup bottled sweet red pepper strips, drained and coarsely chopped
1 cup pineapple tidbits, drained well
3/4 cup toasted walnuts, coarsely chopped (divided)
4 cups washed baby spinach
1/2 cup crumbled black peppercorn feta cheese
Lemon wedges for garnish
Directions
Whisk together dressing ingredients and set aside.
In medium saucepan, bring vegetable broth, cumin and garlic salt to boil. Stir in barley, reduce heat, cover and cook 10-12 minutes until done. Remove from heat. Leave covered 5 minutes and then uncover and let cool slightly.
In large bowl, mix cooled barley, shrimp, red onion, red pepper strips, pineapple, and 1/2 cup toasted walnuts. Drizzle with half of the dressing and toss to mix.
Just before serving, coarsely chop spinach leaves in strips and toss with shrimp and barley mixture.
Divide among four plates and drizzle with remaining dressing.
Sprinkle remaining walnuts and feta cheese on top. Garnish with lemon wedges.

of my favorite dishes to prepare in the hot Texas summers. I love the combination of the sweet and spicy flavors and the burst of colors and varied textures in this salad. Adding barley instead of a traditional pasta adds a whole grain "punch" to the nutritional value of this favorite spinach salad.
