Grilled Shrimp with Roasted Walnut Dressing

Ingredients

    Grilled Shrimp:
    1 lb of Large Shrimp
    1 tablespoon of diced scallions
    4 cloves of Diced garlic
    1 teaspoon of red pepper flakes
    1 tablespoon lemon juice
    1 tablespoon lime juice
    1 teaspoon lemon zest
    1 tablespoon of cilantro
    1/2 cup of favorite Italian dressing
    salt and pepper to taste.

    Salad
    1 cup arugula
    1 Spinach
    1 bibb lettuce
    2 cups romaine lettuce
    1/2 cup basil leaves
    1/3 cup English walnuts
    1/2 cup Mandarin Oranges
    1/4 cup diced mango
    1/4 cup dried cranberries
    1/3 cup of chopped Red,Yellow and Orange Peppers
    2 tablespoons of Diced Red Onion
    1 tablespoon Cilantro
    1/2 cup favorite tomato

    Dressing
    1/2 cup roasted walnut oil
    1/4 cup of white wine vinegar
    2 tablespoons of balsamic vinegar
    1 tablespoon of fresh lime juice
    1 tablespoon fresh orange juice
    1 tablespoon fresh lemon juice
    2 gloves of garlic

    salt and pepper to taste

Directions

    Grilled Shrimp
    Place all ingredients except shrimp in a bowl and combine. Place shrimp in a freezer bag and add combined mixture. Marinate for 1 hour. Grill over your choice of heat source for about 2 and half minutes on each side.

    Salad
    While shrimp are marinating cut up all fruits and vegetables and mix them together.

    Dressing
    With a blender add all wet ingredients except oil and combine. Slowly add oil until all is incorporated.

    Add the shrimp and the greens together and top with the dressing.
