Berry salad with Walnuts and Goat Cheese
A light and refreshing summer salad that adds sweetness and crunch to any summer menu. Can be eaten as an entree or a side dish.

Ingredients
1 bag washed baby spinach
1 1/2 pt raspberries rinsed and dried
1/2 c. diced onion
1/2 c. diced cucumber with the seeds removed.
1 1/2 c. sliced strawberries
1 8 oz. pk reduced fat crumbled goat cheese
1/8 c. strawberry syrup
1/4 c. balsamic vinegar
1/4 c. extra virgin olive oil
1 fresh lemon juiced
1/2 teaspoon lemon zest
Directions
Combine all the salad ingredients into a bowl. Saving the goat cheese and walnuts for last.
In a separate bowl combine the syrup, vinegar, oil, lemon juice, and zest. Whisk until well blended.
Evenly distribute over the salad and then toss lightly to coat. Sprinkle with the goat cheese and walnuts just before serving.

because the flavors blend so well together. I can make it last minute and the produce is perfect for the summer because it is in season and less expensive. I made it healthier by creating my own dressing (you could even substitute sugar-free strawberry syrup)and by substituting low fat goat cheese. The olive oil is heart health. The spinach is loaded with iron and B-vitamins, and the walnuts and berries are rich in antioxidants. Its a light and healthy quick meal that I can make even on the hottest summer days without breaking a sweat.
