Carrot Cranberry Salad
A healthy, crunchy side salad with carrots, dried cranberries, raisins, celery, and toasted walnuts in a honey yogurt dressing. A tiny bit of cinnamon adds a little spice!

Ingredients
1/2 pound carrots, shredded (about 3 large carrots)
1/4 cup raisins
1/3 cup dried cranberries
1/3 cup chopped celery
1/3 cup toasted walnuts, chopped
1/3 cup plain yogurt
3 tablespoons low fat mayonnaise
1 tablespoon honey
1/8 teaspoon cinnamon
Directions
Combine the carrots, raisins, cranberries, celery, walnuts, yogurt, mayonnaise, honey and cinnamon if desired in a small bowl. Chill for several hours or overnight. Garnish with a carrot curl, if desired.

and fresh tasting. It was originally a simple salad of carrots, raisins and mayonnaise with sugar added. I added cranberries, celery and toasted walnuts to give it color, vitamins, and crunch. I lightened up the dressing by adding yogurt, and jazzed it up with honey and cinnamon.
It’s easy to make, requires no special skills or equipment, and the ingredients are easy to find. I hope that you all like it as much as I do.

Being that it's my recipe, I'm slightly biased, but i think it's great!
