California Walnuts | Essential Food for Health
Southwestern Tabbouleh Salad with Jalapeno Vinaigrette
This is a wonderful and healthy salad. The walnuts add a bit of crunch while the sweetness of the cranberries offsets the bite of the jalapeņo.
If Cotija is not available finely diced Monterey Jack may be substituted.

Ingredients
1 cup dry bulgur
1 cup boiling vegetable broth, homemade or canned
1 cup carrots, peeled and shredded
1 cup corn (fresh, frozen (thawed or canned (drained)
1/2 cup Cotia cheese, crumbled
1/4 cup fresh cilantro, finely chopped
1 can (15-ounce)black beans, rinsed and drained
1/2 cup California English Walnuts, toasted and coarsely chopped
1/3 cup dried cranberries
1/3 cup fresh orange juice
1/3 cup fresh lime juice
2 Tablespoons fresh lemon juice
1 medium jalapeņo pepper, seeded and finely chopped
2 Tablespoons extra virgin olive oil
1/3 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper, or to taste
1/4 teaspoon ground cumin (optional)
Directions
In a large bowl combine the bulgur and the broth. Stir to blend. Cover and set aside until the liquid has been absorbed by the bulgur, about 30 minutes. Fluff the bulgur with a fork. Add the carrots, the corn, the cheese, the cilantro, the beans, the walnuts and the cranberries. Stir to combine.
In a small bowl whisk together the orange juice, the lime juice, the lemon juice, the jalapeņo, the oil, the salt, the pepper and the cumin (if using). Pour the dressing over the salad and toss to blend.
Can be served at room temperature or chilled. If serving chilled cover salad while chilling.

because it combines all of the major food tastes while being gentle on the calorie count.
Sometimes I will store the salad and the dressing (in the refrigerator) separately and have the salad for lunch.
This salad can easily be converted to a main course by adding diced, cooked chicken and substituting chicken broth for the vegetable broth.
