Ingredients
Salad
4 cups shredded Romaine lettuce
1 cup grape tomatoes
1 cup cucumber chunks
1 cup carrot slices
1/2 cup Vidalia onions
2 oz. canned corn, drained
2 oz. canned garbanzo beans, rinsed
1 medium boiled potato, cut in chunks
1/2 cup crumbled bleu cheese
1/2 cup toasted English walnuts
1 hardboiled egg, chopped
2 oz. boiled ham
2 oz. sliced turkey.
Dressing
1/4 cup sesame oil
1/4 cup champagne vinegar
1 t. dry mustard
1/4 t. black pepper
Directions
In a small sauce pan heat 1 T. sesame oil. When hot, add walnuts. On medium heat, cook walnuts until toasted and fragrant, stirring frequently. Let cool.
Add all salad ingredients together in a large bowl.
Combine dressing ingredients in a bowl and whisk to incorporate. Pour over salad, toss and serve.

my mother made salads similar to this one. To me, this is comfort food. When I'm craving a salad that has more calories than a fast food hamburger, this is the the answer. It has lots of vegetables, some protein, and the all important crunch. To make it more healthy, I use low fat turkey and ham. Blue cheese is used rather than other cheeses because a little of it goes a long way. Also, the dressing is minimal. A lot of dressing is overpowering and covers the taste of the food.
