Nutty and Sweet
This is an easy to make nutritious, delicious salad with barley, garbanzo, fruits, sprouts, vegetables and California walnuts.

Ingredients
1 cup barley
1 cup garbanzo (drained from an 8 oz can)
1 cup red onions (chopped)
1 cup diced or shredded carrots
1 cup cherry tomatoes
1 cup diced red bell pepper (thinly sliced)
1 cup diced yellow bell pepper (thinly sliced)
1 cup Mung bean sprouts
1 cup diced Granny Smith apple
1 cup diced tofu
Segments from 2 oranges or 4 tangerines
1 teaspoon garlic paste
1 teaspoon crushed fresh ginger
1 cup chopped cilantro
1 cup California raisins
1 cup toasted coconut flakes
2 cups toasted California walnuts
1 tbs extra virgin olive oil
Directions
Soak barley in three cups of hot water overnight. Barley will absorb water and swell. Cook barley with one teaspoon of oil over medium high heat, bring it to boil, then simmer-- about 20-30 minutes. Stir while cooking. Drain and add the cooked barley to a salad bowl. Add the rest of ingredients. Toss well with a tong. Chill or serve at room temperature.

I do not wish to stand in front of a stove for hours. Time is an important factor in preparing a meal. I love salad simply because it is easy to make. I like to make it wholesome.
Walnuts are full of omega 3 fatty acids (2.6 grams/ounce).
The salad is crunchy, sweet and very satisfying.
