Pomegranate Berry Walnut Salad

Ingredients

    1 cup California pomegranate seeds
    1 cup blueberries
    1 cup raspberries
    1 cup blackberry
    1 cup California dates (chopped coarsely)
    1 cup dehydrated, sweetened cranberries
    1 cup California raisins
    1 cup dried apricots
    2 cups freshly squeezed orange juice
    A few saffron threads
    2 cups low fat plain yogurt
    1 teaspoon dried red Chile flakes (optional)
    3 cups toasted California walnuts

Directions

    Dump all the ingredients except the walnuts into a salad bowl. Mix thoroughly with wooden salad spoon. Let the salad sit at room temperature for an hour for the fruits to absorb the juice and the flavor to soak in. Dry roast the walnuts on a heavy skillet over medium high heat to bring out the flavor - about 2-4 minutes. Garnish the salad with the toasted walnuts. Serve chilled or at room temperature.

I meant to give it four stars, but something went wrong. I tried this and it was very good and I will make it again. I liked the addition of chili flakes too.
