Papaya Walnut Coleslaw
A lovely summer coleslaw with a slight tropical flavor.

Ingredients
Coleslaw:
1 head cabbage, shredded
4 carrots, shredded
2 Fuji apples, remove peel, & julienne cut
1 medium red onion, julienne cut
1 cup walnuts, rough chopped and toasted
1/4 cup chopped fresh mint
1 medium papaya, remove peel and seeds, chop (med to large dice)
Dressing:
1 tablespoon Dijon
1/3 cup vegetable oil
1 tablespoon honey
zest of 1 orange
1 orange, juiced
1/2 cup low fat sour cream
salt to taste
dash of cayenne
Directions
Prepare all ingredients for coleslaw, add to large bowl.
In another bowl for dressing, all Dijon, honey, cayenne, zest, juice, salt and whisk in oil. When well blended, whisk in sour cream and pour dressing over cabbage mixture. Gently blend and refrigerate for at least 1 hour. Before serving, blend again

because it's a little different from most coleslaws. I made it light by adding low fat sour cream

I really liked the taste of this salad. However, I used full fat sour cream. This was a nice salad thank you for posting it.

My kind of salad. I love papaya. Since I have a hard time digesting apples I may try pears.
