Chicken salad with apricots and dried cherries

A delicious take on the regular chicken salad

Ingredients

    3 cups chicken breast, cooked, cooled and pulled apart
    1 cup dried (moist) apricots, diced in large chunks
    1 cup dried cherries
    1/2 cup celery, sliced
    1/2 cup scallions, sliced
    1 cup walnuts, chopped and toasted
    1 tablespoon lemon zest
    1 tablespoon lemon juice
    1/3 cup light mayonnaise
    1/3 cup plain yogurt
    1 tsp. curry powder
    salt and freshly ground black pepper to taste

Directions

    Gently simmer chicken until cooked through. Place in refrigerator to cool. In a bowl, add cooled chicken, apricots, cherries, celery, onions and walnuts.

    Dressing:

    In a bowl, mix mayo, yogurt, lemon juice, zest, salt, pepper and curry.

    Combine with chicken mixture tossing gently. Cover and refrigerate at least 2 hours.

    To serve as a salad, line plates with red leaf lettuce and scoop mixture on top. Can also be served on croissant as a sandwich.
