Ingredients

    1 cup Whole-grain Red Quinoa
    2 cup Chicken or Vegetable Broth
    1 cup Walnuts, chopped, toasted
    3 Shallots, minced
    1 cup Tomatoes, fresh, diced
    1/2 cup Basil, fresh, chopped
    3 tablespoon Olive Oil
    Sea Salt
    Fresh Ground Pepper

Directions

    Rinse quinoa and drain. Put in a pot and dry toast until a few grains begin to pop. Add broth, bring to a boil, then cover, reduce heat, and simmer for about 15 minutes, or until the liquid is absorbed. Remove from heat and let stand for 10 minutes. Fluff with a fork and let cool slightly.

    Roast walnuts in 350 oven for 5 to 10 minutes.

    Prepare fresh ingredients and combine everything together.
    Salt and pepper to taste.
    Refrigerate until ready to use - even better the next day.
