This is a salad that is a full meal deal. You can make this in single servings and have all the food groups you need. It is so good. Everyone you serve it to will be in wow mode.

Ingredients

    4 ½ lbs potatoes
    4 cooked and seasoned boneless skinless chicken breasts
    3 large stalks of fresh celery diced small
    6 hard boiled eggs
    1 1/2 c. Hellmann's light mayo
    ½ tsp. Celery Salt
    1 tsp. kosher salt
    1 tsp. black pepper
    1 1/2 tsp. dill weed
    1 tsp. fresh parsley for topping
    2 tsp. (heaping) Grey Poupon Mustard (Harvest coarse ground)
    ½ lb. turkey bacon cooked crisp and crumbled or hormel light real bacon crumbles
    1 c. shredded Monterey jack and cheddar mix
    1 extra large tomato diced small
    1 c. walnuts chopped
    1 large fresh apple diced small (drizzle with lemon juice)

Directions

    Boil potatoes until tender. Let cool about 20 minutes. Skin and peel and dice the potatoes and place in a big bowl Cooks Note: mix salad while the potatoes are slightly warm so the ingredients will marry well. Dice your cooked chicken and add to the potatoes. Add to the potatoes and chicken mixture, diced celery, hard boiled eggs, Hellmann’s mayo, celery salt, kosher salt, pepper, dill weed, Grey poupon mustard, bacon, cheese, tomato, walnuts and apple with lemon juice on it so it does not brown stir very well. Top with fresh parsley and chill at least 4 hours. Over night is so much better. Great for brunch or a single serving meal on the go. This is wonderful anytime.
