Ingredients

hot water

1 cup raisins

2 cups

all-purpose flour

1 cup oatmeal

2/3 cup sugar

2 ½ tsp. baking powder

½ tsp. salt

½ tsp. cinnamon

½ tsp. ground allspice

¼ tsp. ground nutmeg

4-5 small apples

1 egg

2 egg whites

¼ cup canola oil or vegetable oil

½ cup chopped California walnuts

Directions
  1. Preheat oven to 350 F.
  2. Grease muffin tins, or coat with non-stick spray.
  3. Pour hot water over the raisins in a small bowl and let sit 10 minutes; drain well and set aside.
  4. Meanwhile, in a medium bowl, combine the flour, oatmeal, sugar, baking powder, salt, cinnamon, allspice and nutmeg. Stir and toss to combine the ingredients, then set aside.
  5. Peel and core the apples. Grate them coarsely – you need about 2 generous cups, lightly pressed down.
  6. Combine the grated apple with the eggs and egg white, oil and walnuts, and beat to blend.
  7. Add to the combined dry ingredients along with the raisins and stir just until blended and moistened – the batter will be very stiff. Spoon into the prepared muffin tins, filling the cups about three-quarters full.
  8. Bake for 20-25 minutes, or until a toothpick inserted in a muffin comes out clean. Cool 5 minutes in the pan, then remove and serve warm.
