"People think that a spread should only go on bread or toast, but that isn't the case. The more versatile the spread - in this case, parsley, cheese and walnuts - the more creative you can be. A dear friend of mine named Emerald Yeh has a women's group that meets about four or five times a year as part of a fundraising effort for a children's organization. I bring this Swiss Cheese spread, and people tell me they mix with with macaroni or stir it into soups, so it is a delicious and inexpensive way to perk up several dishes."

1/2 cup mayonnaise
6 ounces (2 cups) grated Swiss cheese
1/2 cup finely chopped California walnuts
2 tablespoons finely chopped parsley
- Directions

- In a small mixing bowl mix the mayonnaise with the Swiss cheese and walnuts.
- Cover the bowl with plastic wrap and refrigerate.
- When ready to serve, turn out onto a platter. Sprinkle with parsley and place crackers around the edge.
