- Paradise Foods Waldorf Salad with Smoked Turkey & Walnuts

This recipe first appeared in a 2005 Walnut Marketing Board brochure titled, "Sensational Walnut Recipes from Celebrated Market Chefs." The recipes were created by chefs who work at independent markets in Northern California.
Based on the original Waldorf Salad created at New York City's famed Waldorf-Astoria Hotel circa 1890, this new version is a bit heartier. Turkey adds protein, a variety of fruit adds sweetness, and there's plenty of appealing crunch from the recipe's signature walnuts.

3 Granny Smith apples, quartered, cored and cut into 1/2-inch dice
2 tablespoons lemon juice
2/3 cup dried cranberries
1 cup diced, smoked turkey breast
3/4 cup red seedless grapes, cut in half
1 cup California walnuts, toasted
1 cup thinly sliced celery (about 3 stalks)
3 green onions, thinly sliced
3/4 cup mayonnaise
1/4 cup plain yogurt
1 teaspoon honey
1/2 teaspoon salt
Pinch of cayenne pepper
Several large leaves of butter or red leaf lettuce
- Directions

- In a large bowl, toss apples with lemon juice and set aside.
- In a small bowl, cover cranberries with hot water, let sit for 3 to 5 minutes, then drain well and pat dry with paper towels. Add cranberries, turkey, grapes, walnuts, celery and green onion to apples, then stir and toss to combine.
- Prepare the dressing by combining in a small bowl the mayonnaise, yogurt, honey, salt and pepper. Stir until smooth. Pour over apple mixture and stir until ingredients are evenly coated with dressing.
- To serve place a scoop of salad on a lettuce leaf.
