Ingredients

  • 3 Granny Smith apples, quartered, cored, cut into 1/2-inch dices
  • 2 tablespoons lemon juice
  • 2/3 cup cranberries, dried
  • 1 cup turkey breast, diced, smoked
  • 3/4 cup grapes, red, seedless, cut in half
  • 1 cup California walnuts, toasted
  • 1 cup celery (about 3 stalks), thinly sliced
  • 3 green onions, thinly sliced
  • 3/4 cup mayonnaise, light
  • 1/4 cup yogurt, plain, nonfat
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • Pinch of cayenne pepper
  • Several large leaves of butter or red leaf lettuce

Preparation

  1. In a large bowl, toss apples with lemon juice and set aside.
  2. In a small bowl, cover cranberries with hot water, let sit for 3 to 5 minutes, then drain well and pat dry with paper towels. Add cranberries, turkey, grapes, walnuts, celery and green onion to apples, then stir and toss to combine.
  3. Prepare the dressing by combining in a small bowl the mayonnaise, yogurt, honey, salt and pepper. Stir until smooth. Pour over apple mixture and stir until ingredients are evenly coated with dressing.
  4. To serve place a scoop of salad on a lettuce leaf.
