This one-rise bread is quick, easy, and tasty.  Its hearty flavor pairs well with sharp cheese or rich fruit spreads.  Serve it with a cheese and fruit plate or as an accompaniment to soup or chili.  It's a great bread for a cold winter day and a great way to treat yourself in the middle of the holiday rush.

Ingredients

4 c. flour

1 c. whole wheat flour

2 Tbs. sugar

1 1/2 tsp. salt

2 pkgs. yeast

2 c. beer

2 Tbs. unsalted butter

2 Tbs. molasses

2 eggs

1 1/2 c. (6 oz.) extra sharp Cheddar, pulsed roughly in a food processor

1/2 lb. diced bacon, cooked crisply, drained and cooled

1 c. toasted walnuts, divided

1/3 c. finely chopped scallion greens

Directions

Preheat oven to 375° and place rack in the middle. Coat the inside of a 2-qt. casserole with pan spray. Combine flours, sugar, salt and yeast in mixer bowl.

Combine beer, butter, and molasses in a saucepan. Heat over medium-low heat until warm (120° - 130°). Pour over the flour mixture and mix to moisten ingredients. Add the eggs and mix at low speed to blend thoroughly. Increase speed to medium and beat 2 minutes, scraping down the bowl as necessary. Add Cheddar, bacon, 3/4 c. walnuts, and scallions and mix to distribute the additions. Scrape bowl down again and spray top of dough with pan spray. Cover and let rise for 30 minutes.

Beat dough for a few seconds and place in prepared casserole. Use a wet spatula to push dough into pan evenly and smooth the top. Sprinkle loaf with remaining walnuts. Bake for 40 – 45 minutes on center rack. Remove bread from pan and return to oven for 5 more minutes until bread sounds hollow when tapped on bottom. Let cool on rack.
