Apple pie cake is a hearty, sweet, easy-to-make dessert. It's hard for even the novice cook to ruin this flexible recipe. For instance:
You can use orange juice in the cake, or milk, or just about any sweet acidic liquid.
You can use butter substitutes and it will still brown.
You can vary the sugar amount based on the sweetness of the apples
You can vary the sugar mix to taste
You can vary the spice mix
If you don't want the glaze, you can powder with confectioner's sugar, use cream-cheese frosting or whatever suits your taste. I often drizzle caramel sauce. It's also good by itself.

- Ingredients

1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon allspice
1 teaspoon vanilla
3/4 cup sugar (you can blend light brown, dark brown and white for different variations)
2 cups peeled, chopped apples (any firm baking apple will do)
1/2 cup (1 stick) butter
1 egg
1 cup orange juice
1/2 cup chopped walnuts
For the glaze and topping:
1 cup confectioner's sugar
1/2 teaspoon vanilla
1 teaspoon milk
1/4 cup finely chopped walnuts and walnut halves for garnish

- Preheat your oven to 350 degrees. Grease and flour a 9" round cake pan.
- When preparing your apples, use the orange juice to prevent browning while preparing the other ingredients.
- Sift the dry ingredients (flour, baking soda, spices) together.
- Melt the butter or allow to soften until easy to work with
- Beat the egg until smooth, adding the sugar, butter and vanilla.
- Add your liquid ingredients to your dry ingredients. Use enough orange juice to make the resulting batter thinner, but more like a thick coating than a pourable batter.
- Fold in your apples and the walnuts, making sure everything is evenly coated.
- Bake for 35-45 minutes (based on oven temperature) until the top springs back or a cake tester pulls clean.
- After 5 minutes, release the cake from the pan and allow to cool on a rack until completely cool.
- Mix together the confectioner's sugar, vanilla and milk until you get a pourable consistency. Drizzle the glaze over the top of the cake. Dust wish crushed walnuts and place walnut halves. You can cover mistakes by simply dusting the cake with confectioner's sugar as a final step.
