Apple walnut bake is a breakfast casserole made with eggs and bread, served hot and topped with streusel.

- Ingredients

1 1lb loaf cinnamon bread
3 apples peeled, cored and sliced thin or 1 16 ounce can apple pie filling
1 cup chopped walnuts
6 eggs
1 cup milk
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup honey
Streusel Topping
1/2 cup flour
1/4 cup brown sugar
3 tablespoons butter -- chilled
maple syrup optional

- Directions

peel core, and slice apples, chop walnuts and set aside.
In a large mixing bowl, mix 6 eggs, milk, spices and honey with a wire whip until well blended.
In a small bowl combine flourand brown sugar add chilled butter. mix together with fingers until mixture becomes coarse and resembles a streusel topping
In a 9x13 pan sprayed with pan coating, layer bottom with bread slices, pour 1/2 cup of egg mixture over bread. Let egg mixture absorb into bread and add another layer of bread on top of wet layer. Layer apple slices and walnuts on top of bread, then a layer of cinnamon bread, then slowly pour the remainder of the egg mixture over the bread. Wait until the egg mixture is completely absorbed into the bread, 1 hour or overnight. Add streusekl mixture before putting into a 350 degree oven for 30-35 minutes baked uncovered.
Let stand ten minutes before serving.
Optional: serve with butter and maple syrup
