This is an update version of the classic fruitcake, substituting healthy and fresh dried fruits and heart healthy walnuts for the traditional candied fruit.

- Ingredients

1½ C. golden raisins
½ C. chopped dried apricots
½ C. chopped dried apples
¼ C. chopped dried ginger
2/3 C. apple brandy or apple cider
1 c. butter
1 C. sugar
1 C. brown sugar
2 eggs
2 C. thick applesauce
2 tsp. vanilla OR 1 tsp. vanilla and 1 tsp. brandy extract
2 ½ c. flour
1 tsp. salt
1 ½ tsp. baking soda
½ tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
1 tsp. allspice
2 C. finely chopped walnuts

Soak fruit in brandy or cider overnight.
Preheat oven to 325 degrees. Grease and flour a 10“ tube pan. Line bottom with parchment paper and grease paper. Cream butter and sugars in a large mixing bowl, add eggs and mix well. Add applesauce and vanilla extract. Sift together flour and dry ingredients. Stir into applesauce mixture. Add fruit, brandy and walnuts. Spoon into pan.
Bake for 1 hour and fifteen minutes, or until a toothpick inserted in the center comes out clean.
Cool in pan 5-10 minutes, then remove cake from pan and let cool on wire rack completely.
