A delicious simple cake packed with subtle apricot and walnut flavors.

- Ingredients

1 ¼ cups sugar
¾ cup butter
2 eggs plus 1 egg yolk
1/3 cup apricot preserves
1/3 cup sour cream
2 tsp. vanilla extract
1 ¾ cups flour
½ tsp. baking powder
¼ tsp. salt
½ cup chopped walnuts
Powdered sugar
- Directions

- Preheat oven to 350 degrees.
- Lightly butter a 9 in cake tin or spring form pan.
- In a medium bowl combine dry the dry ingredients (reserve walnuts).
- Cream together sugar and butter until light and fluffy.
- Add eggs, mixing completely.
- Add preserves, sour cream and vanilla extract and beat for 1 minute.
- Fold in dry ingredients.
- Pour into buttered baking tin and sprinkle with walnuts.
- Bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
- Let cool and dust with powdered sugar.
