A delicious simple cake packed with subtle apricot and walnut flavors.

Ingredients

1 ¼ cups sugar

¾ cup butter

2 eggs plus 1 egg yolk

1/3 cup apricot preserves

1/3 cup sour cream

2 tsp. vanilla extract

1 ¾ cups flour

½ tsp. baking powder

¼ tsp. salt

½ cup chopped walnuts

Powdered sugar

Directions
  1. Preheat oven to 350 degrees.
  2. Lightly butter a 9 in cake tin or spring form pan.
  3. In a medium bowl combine dry the dry ingredients (reserve walnuts).
  4. Cream together sugar and butter until light and fluffy.
  5. Add eggs, mixing completely.
  6. Add preserves, sour cream and vanilla extract and beat for 1 minute.
  7. Fold in dry ingredients.
  8. Pour into buttered baking tin and sprinkle with walnuts.
  9. Bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
  10. Let cool and dust with powdered sugar.
  11. Enjoy!
