I like to decorate our home with bowls of fresh fruit as a way to add color in an environmentally-friendly way. Recently, I found myself with far too many apples on hand, and decided to create this recipe for my family. Perfect for brunch, this seemingly decadent yet surprisingly healthy dish brought smiles to everyone at the table, from our toddler to her grandfather!

Ingredients

4 Granny Smith apples (of equal size)

4 teaspoons butter, divided

4 teaspoons brown sugar

1 teaspoon cinnamon

1 teaspoon nutmeg

2/3 cup finely chopped walnuts, toasted

1/4 cup raisins

1/4 cup Grade A maple syrup

1/2 cup apple juice

Directions

Preheat oven to 350 degrees.

Core apples from the top using a melon ball, being sure to leave the bottoms of the apples intact.

Mix brown sugar, spices, walnuts and raisins in a small bowl. Divide into four equal parts.

Place mixture in each apple. Top each apple with one teaspoon butter, and a splash of maple syrup.

Pour apple juice in the bottom of an 8 x 8 glass pan. Place apples in pan, cover with foil, and bake for 40 minutes.

Remove foil, and bake another 15-20 minutes.

Place each apple in a small bowl. Pour remaining apple juice from pan over each dish.
