- Ingredients

1 loaf white wheat sliced bread
1 quart skim milk
1 c. egg substitute
1/2 c. white granulated sugar
1 c. raisins
2 tbs. vanilla extract
3 tbs. margarine
Pomegranate Walnut Glaze
1/2 c. margarine
1/2 c. sugar
1/4 c. evaporated skim milk
1 c. chopped toasted walnuts
1 c. pure pomegranate juice

Break bread into small pieces and put into large bowl. Add milk and let bread soak for 10 minutes.
Mix with hands until milk and bread are blended, then add egg substitute, sugar, raisins and vanilla.
Spray a 13x9 pan with cooking spray. Spoon pudding mixture into pan and bake at 325 degrees F for 1 hour.
Let mixture cool, then cut into squares. Place squares into dishes and spoon pomegranate walnut sauce generally over the top.
For the Pomegranate and Walnut Glaze:
Combine margarine, sugar, milk, walnuts and pomegranate juice into a 3 quart saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and let cool.
Yields 1 ½ cups.
