This sweet walnut cookie is perfect for breakfast or brunch. Toped with a piece of Brie cheese and half a walnut it looks very classy and is delicious. The preparation is easy and it can be prepared the night before and baked in the morning. -

3/4 cup unsalted butter
2/3 cup sugar
1 cup chopped California walnuts
1 egg
1 teaspoon vanilla
1/4 teaspoon salt
1 1/4 cup flour
8-10 oz. Brie cheese, cut into 48 small pieces
48 walnut halves
- Directions

Cover dough and place into the refrigerator for 30 minutes. Shape chilled dough into a 12-inch long log.
With an electric mixer whip butter until soft. Combine sugar and chopped walnuts in a food processor or blender. Process until walnuts are finely ground. Add sugar/walnut mixture to butter and blend until combined. Stir in egg, vanilla, salt and flour. Blend until combined.
Cover with plastic wrap and chill again for 2 hours or overnight. Alternately you could freeze the dough for about 20 minutes until firm.
Preheat oven to 350 degrees F.
Cut chilled dough into 1/4-inch slices and place on ungreased cookie sheet. Bake for 10-12 minutes or until lightly browned. Remove cookies to a cooling rack. Immediately place a piece of Brie cheese on each cookie and top with a walnut half. Makes 48.
