This is a flourless chocolate walnut sandwich cookie filled with a creamy peppermint filling and topped with chocolate drizzle and a walnut half. This tasty attractive cookie can be served any time, but it is especially nice for the holidays

Cookie
1 1/4 cups toasted California English walnuts
2 eggs
3/4 cup powdered sugar
1/4 cup unsweetened cocoa powder
1/8 teaspoon salt
1/2 teaspoon vanilla extract
Filling
1/2 cup powdered sugar
2 tablespoons butter, softened
1/2 teaspoon milk
1/4 teaspoon peppermint flavoring
1 drop green food coloring, optional
Topping
1/4 cup semi-sweet chocolate chips, melted
15 or16 toasted California English walnut halves

Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In food processor, pulse the 1 1/4 cups walnuts until very finely chopped. Set aside.
In medium bowl, combine remaining cookie ingredients. Beat until smooth. Stir in the chopped walnuts. Batter will be thin. Using about 1 tablespoon of batter for each cookie, place about 2 inches apart on the prepared cookie sheets, making about 30 cookies. Bake 6 to 8 minutes or just until set. Cool. Remove from parchment paper.
To prepare filling, combine all filling ingredients in small dish. Stir until smooth. (If necessary, add a few drops more milk to make desired spreading consistency.) Turning the bottom side up spread filling over half of the cookies. Top with remaining cookies. Drizzle with chocolate, and top with walnut halves. Makes 15 or 16 sandwich cookies
