This cookie brings out the best in California Walnuts and the holiday tastes of the season. This recipe easily doubles or triples for your holiday baking days.

- Ingredients

2 cups all-purpose flour
2 cups finely chopped walnuts
1/4 cup sweetened dried cranberries, finely chopped
2 teaspoons vanilla extract
2 1/2 teaspoons ground cinnamon, divided
1/4 teaspoon ground nutmeg
2 1/2 cup powdered (confectioners) sugar
1 cup butter, softened

Heat oven to 325 degrees.
Combine flour, walnuts, cranberries, vanilla, 1 1/2 teaspoons cinnamon, nutmeg, 1/2 cup powdered sugar, and butter in a large mixer bowl. Beat at low speed until well mixed. About 3 to 4 minutes.
Chill dough for 30 minutes.
Shape rounded teaspoon fuls of dough into 1 inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake in oven for 18 to 25 minutes until lightly browned or just set. Cool for 5 minutes then roll in powdered sugar and cinnamon while still warm. Once cookies have cooled roll again in powdered sugar and cinnamon.
