- Servings: 12 (makes 2 loaves)
- Prep Time: 20 minutes plus rise timem
- Cook Time: 30-35 minutesm
- Ingredients
-
1 cup very hot milk
1/4 cup butter
2 tablespoons molasses
2 tablespoons sugar
2 teaspoons kosher salt or (1 1/2 teaspoons table salt)
1/4 cup warm water
2 tablespoons dry yeast (or use 2 packets dry yeast)
2 eggs, beaten
1 cup fine ground toasted English walnuts
3 1/2 to 4 cups unbleached all purpose flour
- Directions
-
Place warm water into mixer bowl and add the yeast. Into another bowl put the very hot milk, add the butter, molasses, sugar and salt. Stir to melt the butter and when this mixture is lukewarm pour into the mixer bowl with the yeast.
Stir to combine and add the eggs, ground walnuts and 3 cups of flour.Beat well adding remaining flour 1/2 cup at a time until you get a slightly firm but sticky dough.
Do not add too much flour.
Knead on the mixer for about 5 minutes or if by hand about 10 minutes.
Place the dough into a large bowl that has been oiled and cover with plastic wrap and a kitchen towel to let rise for 1 hour or until doubled in size. Punch down dough and turn out onto a lightly floured board. Knead for 5 minutes. Cut the dough in half and shape and put into 2 lightly oiled bread pans 9x5. Cover again and let rise 30 to 40 minutes. Preheat oven to 350*. Bake bread 30 to 35 minutes or until hollow sounding when tapped. Remove from oven and brush tops with a little melted butter. Remove to cooling rack. Enjoy!
Tips: You will need about 2 cups of toasted chopped walnuts to make the ground walnuts needed in this recipe. Place these into your food processor and pulse until the walnuts begin to break down. Add about 3 teaspoons of flour a little at a time to keep the walnuts from sticking together and becoming butter. You really want them as fine as you can get them.
This dough is very versatile and can be used used to make rolls as well.
