A simple cookie bar with all the goodness of fruit & nuts, like fruitcake. It is nutrition & taste that can be packed as energy food for the road.

- Ingredients

1 1/2 C dried raisins (preferably chopped)
1 1/2 C dried cranberries (preferably chopped)
3 C finely ground walnuts (firmly packed)
3/4 all-purpose flour
1/2 C light brown sugar (firmly packed)
1/4 C dark brown sugar (firmly packed)
1/2 tsp baking soda
1/2 tsp baking powder
2 tablespoon cinnamon
1/4 tsp salt
3/4 C applesauce
1/4 C water
2 tsp maple syrup
- Directions

1. Preheat oven to 350 degrees.
2. Line two 9x9 baking pans with aluminum foil so that it comes up the sides of the pans.
3. In large bowl, mix raisins, cranberries, & walnuts. Mix well, set aside.
4. In another bowl, mix flour, sugars, baking soda, baking powder, cinnamon, & salt.
5. Pour flour mixture into fruit/nut mix. Mix well. Add applesauce.
6. Mix water & maple syrup. Add to flour/fruit mixture.
7. Vigorously blend until evenly mixed & moist.
8. Separate batter into two pans. Firmly pack it in, spread & smooth top evenly leaving no cracks.
9. Bake for 30 minutes, 350 degrees.
10. Let cool completely in pan. Remove foil from pan & cut into 1-inch squares.
