- Ingredients
-
2 Cups Oatmeal
2 1/2 Cups Whole wheat Flour
2/3 Cup Brown Sugar
1/2 Cup Chopped Walnuts
1/3 Cup Craisins
1/4 Cup Raisins
1/2 Cup Mini Chocolate Chips
1/4 Cup Shelled Sunflower Seeds
1 Cup (2 Sticks Butter)
1/3 Cup Honey
3 Tablespoons Warm Water
2 Teaspoons Baking Soda
36 Walnut Halves
- Directions
-
- Preheat Oven to 350 degrees.
- In mixing bowl combine:
- Oatmeal, Whole Wheat Flour, Brown Sugar, Chopped Walnuts, Craisins Raisins, Chocolate Chips & Sunflower Seeds.
- In a separate bowl melt butter and honey together (microwaveable). Make sure the bowl has enough room for mixtures expansion when adding remaining ingredient.
- Mix Warm water and Baking soda together and pour into butter and honey mixture. The honey butter will expand to approximately twice its depth, becoming foamy.
- With mixture still spinning the dry ingredients, add expanded honey butter, allowing to mix throughly.
- Spoon muffin mixture into ungreased muffin pans (makes approx. 36 muffins). Fill muffin tins half way and press down with back of spoon. Place the tasty Walnut Half on top of each muffin before baking.
- Place in oven and cook for 18 minutes. Muffins will still be semi-soft to the touch when removing from the oven. Allow to cool for 6-8 minutes before removing from the tins.
