I love a very crunchy granola, after several tries I found that the combination of the maple syrup for sweetness and flavor combined with the added crunch of the turbinado sugar were the perfect match. Using walnut oil in place of grapeseed oil intensifies the walnut taste but both are great.

- Ingredients

1/3 cup dark maple syrup
1 Tablespoon pure vanilla extract
½ teaspoon salt
4 cups old fashioned oats
¼ cup turbinado sugar
½ cup unsweetened coconut
½ cup ground flax seed
½ walnuts, chopped¼ cup grapeseed or walnut oil

Place in a small bowl the oil, syrup, vanilla, and salt. Whisk together and set aside.
In a large bowl measure the remaining ingredients. Toss together, then add liquids and continue tossing until the dry ingredients are coated with the liquids.
Spread on a large baking sheet, place in the oven at 225 degrees for 1 1/2 hours. Stir every 20-30 minutes so it toasts evenly.
Remove from heat, let cool and store in an airtight container at room temperature for up to 2 weeks. It will keep in the freezer for 2-3 months.
