These cookies are walnut laden, maple flavored and filled cookie sandwiches that are then dippen in white chocolate. They are truly a decadent, showstopper cookie tray or dessert confection. They are really easy to make though, as the cookes and filling can be made ahead. Assemble at your convenience and dip in white chocolate. Really a special treat.

- Ingredients

Cookies:
3 cups all-purpose flour1 cup shortening
3/4 teaspoon baking soda
½ teaspoon salt
2 cups packed brown sugar
3 eggs
2 teaspoons maple flavoring
2 ½ cups chopped toasted walnuts
Maple Filling:
1/2 cup butter, softened2 cups confectioners' sugar
2 teaspoons maple flavoring
Dipping Chocolate:
4 ounces white chocolate confectioners coating2 tablespoons butter
1/2 cup finely chopped toasted walnuts

Preheat oven to 350 degrees and line two baking sheet with parchment paper. In a large bowl, cream the shortening, brown sugar, eggs and maple favoring. Stir in the flour, baking soda, salt and toasted walnuts. Drop dough by tablespoonfuls 2 inches apart on cookie sheets. Bake 10 to 12 minutes. Let cool on wire racks. Meanwhile prepare filling.
In a large mixing bowl, cream butter, sugar and maple flavoring, cover and chill. When cookies are cooled spread bottom half of half of cookies with filling, top with remaining cookies, press gently. Make dipping chocolate: In a microwave safe bowl heat almond bark and butter on medium setting at 30 second intervals until melted. Bark or coating with hold it’s shape, stir every 30 seconds until smooth . Dip each cookie halfway in chocolate, then in nuts. Place on waxed paper.Makes 24 sandwich cookies.
