Here are two versions of the Mint Surprise Cookies - the original recipe and a speedier version that allows making them in less than 1/2 the time with like flavor.
The original recipe was passed down by my mother and was always a holiday favorite when I was young.

- Ingredients

Mint Surprise Cookies
Cream:
1 c. shortening
1 c. sugar
1/2 c. brown sugar
Blend in: 2 eggs
Add:
3 c. flour
1 t. soda
1/2 t. salt
Mix well. Cover. Refrigerate 2 hours
Enclose each mint wafer in 1 T. dough. Top each with a walnut half. Coat cookie sheet lightly with oil. Bake 375 degrees 10-12 min. Cool on rack.
Original version: 36 solid mint chocolate wafers or baking discs
36 walnut halves
Quick Version: 10-12 oz. bag of mint chocolate chips
2 c. walnuts, coursely chopped
For either version:
1 c. shortening
1 c. sugar
1/2 c. brown sugar
2 eggs
3 c. flour
1 t. soda
1/2 t. salt.

Mix all of the ingredients, except the walnuts. Cover the mixture and refrigerate for 2 hours.
Enclose each mint wafer in 1 T. dough. Top each with a walnut half. Coat cookie sheet lightly with oil. Bake 375 degrees 10-12 min. Cool on rack.

Walnut - Mint Cookies (No chill time required)
Lightly toast 2 c. of coursely chopped walnuts in microwave stir and check after each minute of cook time until lightly toasted. Or in a non-stick pan on high stirring frequently til light golden. Let cool.
Cream:
1 c. shortening
1 c. sugar
1/2 c. brown sugar
Blend in: 2 eggs
Add:
3 c. flour
1 t. soda
1/2 t. salt.
Mix Well.
Stir in toasted walnut pcs..
Stir in: 8-12 oz bag of mint chocolate chips
Place by T size mound on greased tin or use your favorite size cookie scoop. Bake time will be for the standard size.
1/4 cup or larger scoops adjust temperature down to 325 degrees to ensure even browning, and increase bake time accordingly. Baking until light golden. Cool on rack.
