This is my gluten-free version of the Norwegian Rock cookies that my grandma and mom made. They are full of healthy walnuts and dried fruit and only a half cup of sugar in the whole batch. I wanted my sister to be able to enjoy them again, as she is now on a gluten-free diet....and now we all like this version...it's VERY easy ! Makes 2 dozen cookies.

1 large beaten egg
1 C peanut butter
1/2 C granulated sugar
1/2 tsp cinnamon
1 C finely chopped California walnuts
1 C of a mix of raisins, dates, or dried cranberries - your choice

Preheat oven to 350 degrees. In a medium mixing bowl, beat egg. Add peanut butter, sugar and cinnamon. Stir together to blend well. Add walnuts and fruit. Blend well to form fairly stiff dough. Drop, OR , form into small balls. Place about 1 " apart on medium non-stick cookie sheets. Bake in 350 degree oven for 7-9 minutes, until they start to turn golden. Watch carefully so as not to burn- oven times may vary. Cool slightly before removing from cookie sheet.
Makes 2 dozen 1 1/2 " rock cookies.
