1/4 cup firmly packed light brown sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
3/4 cup orange juice
3/4 cup buttermilk
1/4 cup vegetable oil
1 large egg, beaten
1 tablespoon orange zest
1 teaspoon pure vanilla extract
1-1/2 cups toasted English walnuts
1 cup pomegranate arils
Marmalade Cream:
1/2 cup unsalted butter, softened
3 ounces cream cheese, softened
1/2 cup sifted confectioners sugar
2 tablespoons nonfat dry milk powder
Pinch fine sea salt
1/2 cup orange marmalade
- Directions

Preheat oven to 350 degrees F. Grease a 9.5” loaf pan.
Combine flour, sugars, baking powder, baking soda and salt in a large bowl. Whisk to remove any lumps.
In a separate bowl, combine orange juice, buttermilk, oil, egg, orange zest and vanilla. Add to flour mixture and stir until just combined. Fold in walnuts and pomegranate arils and pour into prepared pan.
Bake for approximately one hour until a tester inserted into the center comes out clean. Allow to stand 10 minutes in the pan, then remove from pan and place on a wire rack to cool completely.
To make spread, combine butter and cream cheese in a medium bowl. Cream together with an electric mixer at medium speed. Add sugar, milk powder and salt and beat until smooth. Add marmalade and continue beating until completely incorporated. Serve bread slices slathered with marmalade cream at room temperature.
