A savory low fat scone featuring English walnuts, perfect for any meal from breakfast through a midnight snack.

- Ingredients

1 cup ground plus 1/4 cup finely chopped toasted English walnuts
1 cup cake flour
1/2 cup unbleached all-purpose flour
2 Tbsp chopped Spanish olives
2 Tbsp snipped dried tomato(no oil)
1 Tbsp minced green onion
1 Tbsp minced parsley
1/4 cup grated Parmesan cheese
2 tsp baking powder
1 tsp baking soda
1/4 tsp ground black pepper
1/4 tsp salt
1 cup fat free plain yogurt
2 egg whites, lightly beaten
1/4 cup olive oil

In a large bowl mix the ground nuts, flours, olives, tomato, onion, parsley, cheese, baking powder, soda,pepper, salt and chopped walnuts.
In a small bowl combine the yogurt, egg whites and oil till well mixed;add to the dry mixture and stir till well blended.
Dough will be soft and sticky.
Roll the dough out on a floured surface to 1/2 inch thickness.
Cut into rounds using a 2 1/2 inch cutter.
Place the rounds on a baking sheet that has been sprayed with no-stick spray.
Bake at 425 degrees 10 minutes or till lightly browned.
Serve warm.
