This is our favorite pie to make for the holidays. It's always a big hit when we take anywhere and you'll be lucky if you get to bring any home. You'll never guess that it's loaded with fiber, protein and omega 3s or the secret ingredient that came from old ranch country days.

- Ingredients

1 cup sugar
1 cup brown sugar
1/2 cup butter
4 eggs beaten
2 Tblsp molasses
2 tsp vanilla
1/2 tsp salt
1 cup mashed pinto beans
1 cup walnut halves or pieces - approximate
1 unbaked 9" deep dish pie shell or 10" pie shell
Walnut Praline Topping
1/2 cup finely chopped walnuts
1/2 cup packed brown sugar
1/4 cup softened butter
- Directions

1. Preheat oven to 350 degrees.
2. Cream sugar and butter, add eggs, molasses, vanilla and salt. Beat in mashed pinto beans.
3. Place walnut halves or pieces on bottom of pie shell in a single layer then pour custard mix slowly over walnuts into unbaked pie shell.
4. Bake at 350 degrees for 45 minutes.
5. Meanwhile make walnut praline topping by mixing walnuts and brown sugar, then softened butter and mix well.
6. Sprinkle topping on pie after the 45 minutes, then bake 15 minutes more or until the middle starts to firm up. Let cool for 1 hour.(Mashed red beans can also be used, beans must have been cooked unseasoned and well done. When cooking a pot of beans, I always take out about 2 cups of plain beans before adding seasonings and finish them in a small pot on the stove just for this pie. It's easy to mash the beans in a zip bag with a rolling pin. If not using right away, place in a zip bag and freeze until your ready.)
