This cookie is an updated bar from my Grandmother's recipe collection. It has always been my mother's favorite cookie at the holidays. Since we have all become more health conscious in the last couple of years we started experimenting with the ingredients to make the cookie more wholesome. We think we nailed the recipe. It will always be a tradition on our table over the holiday season in the years to come.

- Ingredients

1 1/4 cups brown sugar, divided
1/2 teaspoon salt
1 cup plus 2 Tablespoons flour, divided
2 Tablespoons water
1/2 cup egg substitute
1 teaspoon vanilla
1/2 teaspoon baking powder
1 1/2 cups coconut
1 cup walnuts, finely chopped
1/4 cup butter
- Directions

Preheat oven to 325F.
Cream the butter, 1/2 cup brown sugar and salt. Add 1 cup flour and blend. Pour in the water and mix until it becomes and thick but spreadable consistency. Pat into a greased 9x13-inch pan. Bake for 20 minutes.
Meanwhile, beat egg substitute, the remaining 3/4 cup of brown sugar and the vanilla until thick and foamy. Add 2 tablespoons flour, baking powder, coconut and walnuts and blend. Spread over baked mixture. Return to oven and bake 25 minutes.
Cool and cut into small bars.
