Ingredients

California Walnut Smashburger
  • 1 cup California walnuts
  • ½ cup garbanzo beans, cooked
  • 1/3 cup Panko bread crumbs
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon seasoning salt
  • 1 tablespoon vegetable oil
  • 1 egg, whole
Bourbon Cherry Compote
  • 1 cup cherry preserves
  • 1 tablespoon bourbon whiskey
Assembly
  • 4 tablespoons vegetable oil
  • 4 Brioche hamburger buns
  • 4 Walnut Smashburgers, portioned into 3-ounce patties
  • 12 slices Brie cheese
  • 1 cup Bourbon Cherry Compote
  • 2 cups baby arugula, rinsed

Preparation

California Walnut Smashburger
  1. Place all ingredients in a food processor and pulse until the walnuts are about the size of a grain of rice.
  2. Portion into 3-ounce balls and press between two pieces of parchment paper to form a patty.
  3. Wrap tightly with plastic wrap and store under refrigeration until ready to use.
Bourbon Cherry Compote
  1. In a small sauce pan, combine all ingredients and bring to a boil.
  2. Cook until the alcohol is burned off, but the bourbon flavor remains–about 3 minutes.
  3. Remove from heat and allow to cool under refrigeration.
  4. Store under refrigeration until ready to use.
Assembly
  1. Preheat a flat-top griddle to 350°F.
  2. Once heated, drizzle with oil and toast the brioche buns and Smashburgers until golden.
  3. After the first flip, top each smashburger with Brie cheese and cook on the griddle until cheese is melted.
  4. Build each burger in the following order: 1 brioche bun heel, 1/8 cup of cherry compote, 1 walnut Smashburger, 3 slices of melted brie cheese, 1/8 cup of cherry compote, ¼ cup of arugula and 1 brioche bun top.
  5. Serve with your favorite side and enjoy.
