Ingredients

  • ½ cup dried sweet cherries (soaked in hot water for 30 minutes)
  • 1½ cups California walnuts
  • 3 tablespoons water
  • 6 tablespoons vanilla protein powder
  • 1 tablespoon chia seeds
  • 1 tablespoon coconut flour
  • 1½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon vanilla extract

Preparation

  1. Soak cherries in hot water for at least 30 minutes.
  2. Carefully remove cherries from the soaking water, add them to food processor, reserving the water. Add 3 tablespoons of water from soaking to the cherries in the food processor.
  3. Pulse until slightly broken up. Add 1 cup of walnuts and process for 10 seconds.
  4. Add protein powder, chia seeds, coconut flour, cinnamon, ground ginger and vanilla extract. Process well until combined.
  5. Add the remaining walnuts at the end and process quickly to chop.
  6. Scoop out tablespoon of the mixture and roll into a ball. Store in sealed container in the fridge.
