Ingredients

  • 1 can (15 ounces) cannellini beans
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 2 Chipotle Peppers in Adobo Sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup crushed walnuts, divided
  • 2 tablespoons chopped fresh parsley
  • 8 jalapeños (cut length-wise and de-seeded)

Preparation

  1. Preheat oven to 350
  2. Place the beans, lime juice, olive oil, salt and pepper, and Chipotle peppers in a blender and pulse till well incorporated.
  3. Mix 1/2 cup chopped walnuts into bean mix with a spoon.
  4. Spoon this chipotle walnut bean mix into the jalapenos and top with 1/4 cup crushed walnuts
  5. Bake in preheated oven for 12-15 minutes.
  6. Sprinkle with parsley, enjoy with ketchup or straight up
