These crispy baguette slices topped with goat cheese, sweet cherries, toasted walnuts and thyme are a simple, sweet and savory crowd pleaser.
1. Preheat oven to 350°F. Line two baking sheets with tin foil.
2. Place the baguette slices on one baking sheet. Add 2 tablespoons extra virgin olive oil in a small bowl and brush each side of the baguette slices with the oil.
3. Place walnuts in a single layer on the second baking sheet. Place both baking sheets into the oven and bake for 10 minutes.
4. After 10 minutes, remove both baking sheets. Set walnuts aside and chop once cooled. Flip baguette slices and bake 5 more minutes. Remove from oven and place baguette slices on a serving dish.
5. While the baguette and walnuts are toasting, add remaining 1 tablespoon extra virgin olive oil to a medium saucepan over medium heat. Add frozen cherries and 2 tablespoons thyme leaves. Heat until cherries are thawed and juices have reduced, 10-15 minutes, stirring frequently.
6. Spread each crostini with goat cheese, then top with warm cherries, chopped toasted walnuts, remaining thyme leaves and a sprinkle of sea salt and pepper. Serve immediately.
