1/2 cup walnut syrup, recipe follows
1 quart soda water
1/4 cup coconut cream
1 cup water
1/2 cup raw sugar
1 split vanilla bean
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1 cup toasted California walnuts
To make walnut syrup, combine water, raw sugar, split vanilla bean, cinnamon and salt in saucepan; heat to low boil.
Add cream of tartar and simmer 5 minutes. Off heat, steep 5 minutes.
Remove vanilla bean and transfer to blender; add toasted California walnuts and process until smooth. Chill before using.
Fill tall glasses with ice. Add 2 tablespoons walnut syrup and top with 8 ounces soda water.
Spoon 1 tablespoon coconut cream over each.
