1 large ripe apple, peeled, cored and cut in 1-inch wedges
1 large ripe pear, peeled, cored and cut in 1-inch wedges
3 tablespoons dried cranberries
3 tablespoons freshly squeezed lemon juice
3 tablespoons honey
1/2 teaspoon vanilla extract
1/3 cup toasted, chopped walnuts
Preparation
Lightly butter a baking pan that will hold the prepared fruit in a slightly crowded, overlapping layer. (An 8 1/2 – x 4 1/2-inch loaf pan works well).
Add the apples, pears, cranberries, lemon juice, honey, and vanilla; mix well.
Bake at 350°F for about 45 minutes, stirring once, until the fruit is tender when pierced. Fruit that is especially ripe can be done is as little as 30 minutes, while firmer fruit can take up to 1 hour.
Remove from the oven and sprinkle with walnuts. Serve hot, warm or at room temperature.
